Chef Dieuveil Malonga is a young gourmet chef renowned for his innovative Afro-Fusion cuisine. In 2018, he was ranked 6th by Forbes in their 30 Under 30 list and was a finalist for the prestigious Basque Culinary World Prize. He has also been recognized in The World’s 50 Best Restaurants and was named Champion of Change by the same organization in 2022 for his dedication to nurturing African culinary talent.

Originally from Brazzaville, Congo, Chef Malonga grew up in Germany, traveled through 48 African countries over two years, and eventually settled in Kigali, where he opened his acclaimed restaurant, Meza Malonga. Dining at Meza Malonga is a unique three-hour culinary experience, with each meal intricately connected to Chef Malonga’s 7-hectare farm, which supplies over 500 spices and ingredients from various countries. He brings seeds from his travels, including those from Jamaica and Brazil, infusing his dishes with extraordinary flavors.

Chef Malonga describes his restaurant as a school for aspiring chefs, encouraging innovation with a modern touch. “It’s like a laboratory,” he says. The dining experience features 12 to 14 courses, with no fixed menu; instead, each day highlights the cuisine of a different African country. As Chef Malonga passionately explains the dishes, he draws parallels to childhood memories, likening them to beloved songs.

“The dining experience is more about education,” he notes. “For example, you could be from Nigeria and not know the spices and ingredients of your own culture. We showcase what they look like and how we transform them.” Much like a museum curator, he invites guests to touch and experience the spices, emphasizing the importance of sharing knowledge.

Chef Malonga’s culinary journey began with his grandmother, who owned a restaurant. “I think I knew what I wanted to do when I came to Germany,” he recalls. His formal training in culinary science only deepened his commitment to food.

Malonga’s decision to blend travel and culture into his cuisine stems from his upbringing in a village where food and culture were intertwined. His extensive travels have inspired him to understand and celebrate Africa’s diverse culinary landscape. “I am inspired by the countries I visit, bringing back spices that influence my dishes,” he explains, attributing much of his inspiration to his grandmother’s teachings.

An avid athlete, Chef Malonga prioritizes health. With all ingredients sourced from his farm, diners can enjoy a healthy and vibrant culinary experience. “The quality of the ingredients is crucial. The more organic, the healthier,” he asserts. Chef Malonga is also in the process of building a new restaurant on his farm, promising a unique village experience for visitors.

What’s next for Chef Malonga? “A book on the different colonial powers and kingdoms and their impact on Africa’s culinary heritage.”

As for his favorite African destination? “Cameroon—it’s like a microcosm of Africa, rich in diverse ingredients.”
